Valentine’s Day Baking Challenge

Updated: May 21, 2020

Hello everyone! Welcome back to another semester at UT. The publicity kicked off 2020 by doing a fun cooking challenge where we bake Valentine Day themed cookies without a recipe! Make sure to check out the video on the UT SWE YouTube Channel to see who won.

If you are interested in making the cookies featured in the video properly the recipe is listed below.

Ingredients

1 cup of softened butter

½ cup of powdered sugar

1 tsp of vanilla extract

¼ teaspoon salt

2 cups all-purpose flour

⅓ cup of white chocolate

⅓ cup of raspberry jam

Steps (With commentary on each step on how we messed up in the video)

Preheat oven to 350F (not 375 lol) and line a baking tray with parchment paper (we got that right at least)

Cream together the butter and sugar with a hand mixer (nope)

Add vanilla and salt (Jessie just forgot salt in addition to adding eggs and milk)

Gradually add the flour (We really both started out with flour… whoops)

Roll out the dough to ⅛ inch thick

Cut out the cookie shapes

Chill the cookies in the fridge while oven is preheating ( We completely skipped this step haha)

Bake for 8 minutes (We really let those cookies bake in the oven for 20 minutes)

Let the cookies cool

Spread a layer of white chocolate on the one cookie, let it set, and then spread jam over the set white chocolate (We forgot to buy white chocolate…)

Sprinkle powder sugar over the cut out cookies

Put the cookies together and you’re done!

Thanks for reading our blog post. If you decide to make these cookies for yourself please send pictures out way! Let us know if you enjoyed this kind of content by leaving a comment on the video and suggestions you may have for future vlog videos.
